2. Gingered Quinoa Salad
Serves 1
- 100g Quinoa
- 1 tbs sesame oil
- 4 tbs sunflower oil
- Juice of 1 orange
- 2 x spring onions - chopped
- 1 x red pepper - diced
- 2cm (¾ inch) ginger - peeled and grated
- half a cucumber - peeled and chopped
- Dash of Tamari
- Handful of chopped mint and coriander
Put the oils, orange juice, ginger and tamari in a screw top jar and give it a good shake to mix well.
Combine the chopped coriander and fresh mint with the Quinoa and add the dressing.
