Tuna and Bean Salad
- 1 small tin (198g) of tuna in sunflower oil
- 1 unwaxed organic lemon
- 2 tbs chopped parsley
- 1 (large, 400g) can organic butterbeans
- 1 small red onion or spring onions finely sliced
Strain the tuna, mix with the beans. Squeeze over the lemon juice and top with chopped parsley and onion.
